What Is a Truffle?

What Is a Truffle? A truffle is a kind of black, potato-shaped mushroom that grows underground, usually among the roots of trees. Truffles grow wild in England, France and other European countries, and are prized the world over for their delicious flavor.

As truffles grow several inches underground, it is difficult to find them. Most of them are gathered with the help of a “truffle dog”— a dog or, often, a pig that is specially trained to sniff them out.

A truffle dog can smell a truffle from several feet away, and will run quickly to the spot and dig it out.
